Ingredients:
For Marinade:
- 500 grams boneless chicken, cut into cubes
- 1 cup plain yogurt
- 1/2 cup fresh cream (malai)
- 2 tablespoons ginger-garlic paste
- 1 teaspoon white pepper powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to your spice preference)
- Salt to taste
- Juice of 1 lemon
For Cooking:
- Skewers (wooden or metal, if using wooden skewers, soak them in water for 30 minutes)
- Cooking oil or ghee for basting
Instructions:
In a large bowl, combine yogurt, fresh cream, ginger-garlic paste, white pepper powder, garam masala, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and lemon juice. Mix well to form a smooth marinade.
Add the chicken cubes to the marinade, ensuring each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or preferably overnight to allow the flavors to meld.
Preheat your grill or oven to medium-high heat.
Thread the marinated chicken cubes onto skewers.
If you're using a grill, brush it with a little oil to prevent sticking. If you're using an oven, you can place the skewers on a baking sheet lined with parchment paper.
Cook the skewers on the grill or in the oven, turning occasionally to ensure even cooking. Baste the chicken with oil or ghee to keep it moist.
Cook until the chicken is fully cooked and has a nice char on the edges. This usually takes about 15-20 minutes, depending on the heat of your grill or oven.
Once done, remove the skewers from the heat and let them rest for a few minutes.
Serve the Malai Boti hot with naan or rice. You can garnish it with chopped coriander and a drizzle of lemon juice if desired.
