Chicken Pakora recipe

 




Ingredients:

  • 500g boneless chicken, cut into small pieces
  • 6 tbsp gram flour (besan)
  • 3 tbsp rice flour or cornstarch
  • 1 egg white (or substitute with yogurt for binding)
  • 1 medium onion, finely chopped (optional)
  • 2-3 green chilies, finely chopped (optional)
  • 2 tbsp fresh coriander leaves, chopped
  • 1 tbsp ginger-garlic paste
  • 1 tsp garam masala
  • 1 tsp Kashmiri red chili powder (adjust to taste)
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Oil for deep frying

Instructions:

  1. In a mixing bowl, combine the gram flour, rice flour, salt, turmeric, chili powder, and garam masala.
  2. Add the chicken pieces to the bowl along with the ginger-garlic paste, green chilies, coriander leaves, and onion.
  3. Mix well, ensuring each piece of chicken is coated with the spices and flour.
  4. Beat the egg white lightly and add it to the chicken mixture to bind everything together. If needed, add a little water to get the right consistency.
  5. Heat oil in a deep pan over medium heat.
  6. Once the oil is hot, carefully drop spoonfuls of the chicken mixture into the oil.
  7. Fry the pakoras until they are golden brown and crispy, usually about 4-5 minutes.
  8. Remove the pakoras with a slotted spoon and drain on paper towels.
  9. Serve hot with mint chutney or ketchup.

White chicken Karahai






 Ingredients:

  • 1 kg chicken, cut into pieces
  • 1 cup yogurt
  • 1 cup cream
  • 2 large onions, finely sliced
  • 2 tomatoes, chopped
  • 1/4 cup cooking oil or ghee
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon white pepper powder
  • 1 teaspoon garam masala
  • 1 teaspoon fenugreek leaves (kasuri methi), crushed
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. In a large mixing bowl, combine yogurt, cream, ginger-garlic paste, cumin seeds, coriander powder, white pepper powder, and salt. Mix well to form a marinade.

  2. Add chicken pieces to the marinade, making sure each piece is well coated. Cover and let it marinate for at least 2 hours, or preferably overnight in the refrigerator.

  3. Heat oil or ghee in a karahi or a deep pan. Add sliced onions and sauté until golden brown.

  4. Add chopped tomatoes and cook until they become soft and the oil starts to separate.

  5. Add marinated chicken along with the marinade to the pan. Cook on medium heat until the chicken is fully cooked and the oil starts to separate.

  6. Sprinkle garam masala and crushed fenugreek leaves over the chicken. Mix well and cook for an additional 5-7 minutes.

  7. Garnish with fresh coriander leaves and serve hot with naan or rice.

Chicken karahai

 


 Ingredients:

  • 1 kg chicken, (cut into pieces)
  • 3-4 tablespoons cooking oil
  • 3 small onions, finely sliced
  • 2 tablespoons ginger-garlic paste
  • 4-6 tomatoes, chopped
  • 2-3 green chilies, chopped
  • 1/2 cup plain yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a karahi or a deep pan over medium heat.

  2. Add sliced onions and sauté until they become golden brown.

  3. Add the chicken pieces and coat them well with the masala. Cook for 5-7 minutes until the chicken is sealed and changes color.

  4. Add ginger-garlic paste and sauté for another 2-3 minutes until the raw smell disappears.

  5. Add chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate from the masala.

  6. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for 2-3 minutes.

Chicken Roast in Pakistani style

  • 1 whole chicken (about 1.5 to 2 kg)
  • 4 tablespoons yogurt
  • 2 tablespoons ginger-garlic paste

  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
