Taquitos are a delicious Mexican dish made with rolled tortillas filled with various fillings, typically fried until crispy. Here's a basic recipe for chicken taquitos, but you can customize the fillings to your liking:

Ingredients:

For the Filling:

  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped cilantro

Instructions:

  1. In a large bowl, combine the shredded chicken, shredded cheese, diced onions, diced bell peppers, chopped cilantro, cumin, chili powder, salt, and pepper. Mix well to create the filling.

  2. Heat the tortillas briefly in the microwave or on a dry skillet to make them more pliable and easier to roll.

  3. Place a small amount of the chicken and cheese filling (about 2-3 tablespoons) in the center of each tortilla.

  4. Roll up the tortilla tightly, ensuring the filling is securely enclosed. Use toothpicks to help keep the taquitos closed, if needed.

  5. Heat about 1 inch of vegetable oil in a large skillet or pot over medium-high heat. You can also use a deep fryer if you have one. To check if the oil is hot enough, you can add a small piece of tortilla; if it sizzles and bubbles, it's ready.

  6. Carefully place the rolled taquitos seam side down into the hot oil, making sure not to overcrowd the pan. Fry them in batches if necessary.

  7. Fry the taquitos until they are golden brown and crispy, turning them as needed to ensure even cooking. This should take about 3-4 minutes per side.

  8. Using tongs, remove the taquitos from the oil and place them on a plate lined with paper towels to drain any excess oil.

  9. Remove the toothpicks before serving.

  10. Serve the chicken taquitos with your choice of dipping sauces, such as salsa, guacamole, or sour cream.

  • 1 pound ground beef or chicken

  • 1 cup corn (canned, drained, or frozen)
