Barfi with Dry Milk recipe

 


Ingredients:

  • 2 cups full-fat milk powder
  • 1 cup condensed milk
  • 1/2 cup ghee (clarified butter)
  • 1/2 cup milk
  • 1/2 teaspoon cardamom powder
  • Chopped nuts for garnish (optional)

Instructions:

  1. Prepare the Pan:

    • Grease a square or rectangular pan with ghee or line it with parchment paper. This will make it easier to remove the barfi once it's set.
  2. Mix Dry Ingredients:

    • In a mixing bowl, combine the milk powder and cardamom powder.
  3. Prepare the Barfi Mixture:

    • In a heavy-bottomed pan, add the ghee, condensed milk, and milk. Stir continuously over medium heat to avoid sticking.
  4. Cook the Mixture:

    • Continue stirring the mixture until it starts to thicken. This may take around 10-12 minutes. The mixture should begin to leave the sides of the pan.
  5. Add Milk Powder Mixture:

    • Reduce the heat to low, and slowly add the milk powder mixture to the pan, stirring continuously to avoid lumps.
  6. Cook Until Thickened:

    • Keep stirring the mixture until it thickens and forms a dough-like consistency. It should leave the sides of the pan.
  7. Transfer to the Pan:

    • Transfer the mixture to the prepared pan and spread it evenly. You can use a spatula or the back of a spoon to smooth the surface.
  8. Garnish (Optional):

    • If desired, sprinkle chopped nuts (like almonds or pistachios) on top and press them lightly.
  9. Let It Set:

    • Allow the barfi to cool to room temperature. Once cooled, refrigerate for a few hours or overnight to let it set completely.Once the barfi is fully set, take it out of the refrigerator and cut it into squares or diamond shapes using a sharp knife.
