Ingredients:
- 2 cups full-fat milk powder
- 1 cup condensed milk
- 1/2 cup ghee (clarified butter)
- 1/2 cup milk
- 1/2 teaspoon cardamom powder
- Chopped nuts for garnish (optional)
Instructions:
Prepare the Pan:
- Grease a square or rectangular pan with ghee or line it with parchment paper. This will make it easier to remove the barfi once it's set.
Mix Dry Ingredients:
- In a mixing bowl, combine the milk powder and cardamom powder.
Prepare the Barfi Mixture:
- In a heavy-bottomed pan, add the ghee, condensed milk, and milk. Stir continuously over medium heat to avoid sticking.
Cook the Mixture:
- Continue stirring the mixture until it starts to thicken. This may take around 10-12 minutes. The mixture should begin to leave the sides of the pan.
Add Milk Powder Mixture:
- Reduce the heat to low, and slowly add the milk powder mixture to the pan, stirring continuously to avoid lumps.
Cook Until Thickened:
- Keep stirring the mixture until it thickens and forms a dough-like consistency. It should leave the sides of the pan.
Transfer to the Pan:
- Transfer the mixture to the prepared pan and spread it evenly. You can use a spatula or the back of a spoon to smooth the surface.
Garnish (Optional):
- If desired, sprinkle chopped nuts (like almonds or pistachios) on top and press them lightly.
Let It Set:
- Allow the barfi to cool to room temperature. Once cooled, refrigerate for a few hours or overnight to let it set completely.Once the barfi is fully set, take it out of the refrigerator and cut it into squares or diamond shapes using a sharp knife.
