Ingredients:
- 4 cups grated carrots
- 3 cups full-fat milk
- 1/2 cup sugar (adjust according to taste)
- 1/4 cup ghee (clarified butter)
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional, for color and flavor)
Instructions:
Grate the Carrots:
- Peel and grate the carrots using a fine grater. Set aside.
Cooking the Carrots:
- In a heavy-bottomed pan, add the grated carrots and milk.
- Cook on medium heat, stirring occasionally to prevent the milk from sticking to the bottom.
- Cook until the carrots are soft, and the milk has evaporated, leaving a thick mixture.
Adding Sugar:
- Add sugar to the carrot mixture and continue to cook. The sugar will release water, so continue cooking until the mixture thickens again.
Adding Ghee:
- Once the carrot mixture starts coming together, add ghee and stir well.
- Cook until the halwa reaches a thick, pudding-like consistency.
Adding Nuts and Flavorings:
- Add chopped nuts, cardamom powder, and saffron strands (if using).
- Mix well and cook for an additional 2-3 minutes.
Serve:
- Garnish with more nuts if desired.
- Serve warm or at room temperature.
