Carrot Halwa/ Gajjar ka Halwa

 





Ingredients:

  • 4 cups grated carrots
  • 3 cups full-fat milk
  • 1/2 cup sugar (adjust according to taste)
  • 1/4 cup ghee (clarified butter)
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional, for color and flavor)

Instructions:

  1. Grate the Carrots:

    • Peel and grate the carrots using a fine grater. Set aside.
  2. Cooking the Carrots:

    • In a heavy-bottomed pan, add the grated carrots and milk.
    • Cook on medium heat, stirring occasionally to prevent the milk from sticking to the bottom.
    • Cook until the carrots are soft, and the milk has evaporated, leaving a thick mixture.
  3. Adding Sugar:

    • Add sugar to the carrot mixture and continue to cook. The sugar will release water, so continue cooking until the mixture thickens again.
  4. Adding Ghee:

    • Once the carrot mixture starts coming together, add ghee and stir well.
    • Cook until the halwa reaches a thick, pudding-like consistency.
  5. Adding Nuts and Flavorings:

    • Add chopped nuts, cardamom powder, and saffron strands (if using).
    • Mix well and cook for an additional 2-3 minutes.
  6. Serve:

    • Garnish with more nuts if desired.
    • Serve warm or at room temperature.
